Sundried Tomato Dip

I served this dip for the first time at a baby shower that I hosted this past weekend…risky to serve it for the first time for company, I know, but it came very highly rated on the Taste of Home website, so I took a leap of faith!

1 package cream cheese (let sit at room temperature for 30 min to soften)
1 cup mayonnaise
1/4 cup chopped onion
3 garlic cloves, chopped
1/2 jar (7oz) sundried tomatoes, drained and chopped
1/3 cup roasted red pepper, chopped
1.5 cups shredded mozzarella cheese
0.5 cups shredded cheddar cheese
1/2 cup Parmesan cheese, grated
Assorted crackers

1.  Combine cream cheese, mayonnaise, onion and garlic (I used my stand mixer to save myself some time/energy).  Stir in tomatoes, red peppers, mozzarella, cheddar and half of the Parmesan cheeses.

2.  Put into 8x8inch baking dish or casserole.  Sprinkle with remaining Parmesan cheese.  Bake at 350 for 20 minutes and serve with crackers.

Yield: 14 servings
