Beef in Mushroom Gravy

My hubby has been spoiled lately…on Thursday, we had his most favourite meal, Taco Pasta Shells and tonight we’re having his #2 favourite, Beef in Mushroom Gravy.  He’d eat these meals every week if I’d let him…good thing I believe in variety!

This recipe is from www.tasteofhome.com and is SO easy!  Toss the four ingredients into the slow cooker and come back in 7-8 hours for a delicious beef roast.  It makes a delicious gravy which I serve with mashed potatoes and whatever other veggie we have on hand.

2-2.5lbs boneless beef round roast
1-2 envelopes onion soup mix
1 can condensed cream of mushroom soup, undiluted
1/2 cup water

Cut roast into 6 serving size pieces and place in 3-qt slow cooker.  Combine soup mix, soup and water; pour over beef.  Cover and cook on low for 7-8 hours or until meat is tender.

Yield: 6 servings.
I usually half the recipe and we always have enough leftovers for hot beef sandwiches the next day!
