Easy/Yummy Mac and Cheese

It’s been forever since I’ve made homemade macaroni and cheese…to the point that I can’t remember when the last time was.  Certainly not within the almost three years of my marriage.

One day, I was watching the Food Network and Ricardo and Friends had an episode featuring bacon-topped macaroni and cheese.  It sounded quite decadent with bacon and cubes of bread sautéed in butter…it also sounded deadly for the waist line!

I lightened it up a bit (it’s still not exactly calorie-wise) and made it a bit more figure-friendly by substituting a little bit of shredded Romano cheese and bread crumbs to top it off.

Ingredients:
-3/4 pound macaroni
-3 tbsp butter
-3 tbsp flour
-1/2 tsp paprika
-1/4 tsp ground mustard
-1 pinch ground nutmeg
-1-3/4 cup milk (I used homo milk, don’t know how 1 or 2% would work…I had a recipe that called for homo milk that did NOT work with 1%)
-1-1/2 cup shredded cheddar cheese
-hot pepper sauce to taste (I left this out)
-bread crumbs and shredded Romano cheese

1.  Cook macaroni according to package directions and put aside (coat lightly with oil to prevent pasta from clumping).
2.  Melt butter in a pot over medium heat.  Add flour, paprika, mustard and nutmeg and cook for one minute, stirring constantly.
3.  Slowly whisk in the milk and bring to a boil, stirring constantly.  Simmer for 2 minutes.
4.  Add cheese and stir until melted.  Season with salt and pepper.
5.  Top with bread crumbs and Romano cheese and broil until cheese melts and crumbs are browned.

dude, i hope the boyfriend doesn’t read this because i’ve been trying to behave myself with my eating lately and this would seriously kill that

haha….it’s not quite THAT bad…you’ll just have to have a small portion and add some steamed veggies to fill up
