Homemade Christmas Gift: Star Anise & Apple Simple Syrup

I gave this simple syrup to my in-laws as part of their Christmas gift this year…it’s very easy and quick to prepare and has a nice subtle flavour.  I found the recipe in Canadian Family magazine (Nov. 2008).

2 cups water
1-3/4 cups granulated sugar
skins and cores of 2 red-skinned apples (reserve flesh for another use)
3 whole star anise pods

1.  Combine water, sugar, apple skins and cores into saucepan over medium heat and bring to a boil.  Reduce heat and simmer until rosy pink and fragrant (20 minutes).  Remove from heat.
2.  Add star anise pods and let cool.  Remove star anise and apple pieces and chill.
3.  Strain through cheesecloth and package into small jars or bottles for gift giving.

Makes 2 cups…will keep 2 weeks in refrigerator.
You can use this simple syrup to flavour whipped cream, drizzle over fresh fruit or to sweeten hot or iced tea.  It would also go well with the holiday pound cake I wrote about yesterday, or mixed into a cocktail with vodka, lemon juice and a dash of vanilla!

what the heck is star anise? i don’t understand.

it’s a spice…the pods look like stars and it tastes like licorce

oh…i rather dislike licorice
