Homemade Christmas Gift: Caramel Corn

I’ve given my homemade caramel corn as gifts for three Christmases and it always gets rave reviews.  It’s so addictive!

24 cups or 3 big bags of popped popcorn
2 cups packed brown sugar
1 cup butter/margarine
1/2 cup corn syrup
1 tsp salt
1 tbsp vanilla
1/2 tsp baking soda

In a saucepan, combine brown sugar, butter, corn syrup and salt; bring to a boil over medium heat, stirring constantly.  Boil for 5 minutes, stirring occasionally.

Remove from heat and stir in vanilla and baking soda.  Pour over popcorn and stir until well-coated.

Pour into two greased 9×13 baking pans.  Bake, uncovered, at 250 degrees for 45 minutes, stirring every 15 minutes.

Cool completely.  Store in air-tight containers.  (I always remove it from the pans into the air-tight containers right away; otherwise, the caramel hardens to the pan and the kernels all break when you try to scrape them out.  The caramel corn will harden into a large chunk, but shaking the container will cause it to break into bite-size pieces)

In previous years, I’ve packaged the caramel corn in cellophane bags but this year, I put it into empty formula cans that I’ve covered with wrapped paper for a more festive look.
