Cookie Party: Divine Toffee Bars

Posted on: December 14, 2010

These toffee bars were contributed to the recent cookie exchange party by my friend Shannon (you can read her blog here).  They should come with a diabetic warning because they are SO sweet!
1/2 cup all purpose flour
3/4 cup Rice Krispies
1/4 tsp baking soda
pinch of salt
1/3 cup firmly packed brown sugar
1/3 cup butter/margarine (melted)
14 oz. canned sweetened condensed milk (1.5 cans)
1/2 cup butter/margarine
1/2 cup firmly packed brown sugar
1/2 cup semi-sweet chocolate or butterscotch chips
1-1/4 cups Rice Krispies

1.  Thoroughly combine first 6 ingredients.  Press into a greased 8″ square pan and bake at 350 degrees for about 10 minutes or until just starting to turn brown.
2.  In heavy sauce pan, combine condensed milk, 1/2 cup butter and 1/2 cup brown sugar.  Over medium heat, bring to a full boil and boil for 5 minutes, stirring continuously.  Remove from heat and pour over baked crust.
3.  Melt chips and stir in cereal until well coated.  Spread on top of caramel.  Chill several hours to set.

She doubled the recipe and used a 9×13 pan.  She cut them into 60 pieces, and that was the perfect size!
