Cookie Party: Mincemeat Tartlets

Finally, the third recipe that my over-acheiving sister contributed to my recent cookie exchange party!

Mincemeat Ingredients:
2 lemons
6 cooking apples
2 cups packed brown sugar
1/2 lb mixed candied peel (1-1/2 cups)
1 cup cranberries
1 cup each golden raisins and dry currants
1 cup cider or apple juice
1 tsp cinnamon
1/2 tsp each nutmeg and salt
1/4 tsp each pepper and ground all-spice
1/2 cup brandy (Calvados)
1/2 cup butter
1 cup chopped toasted walnuts

Crust Ingredients:
3/4 cup shortening
2-1/4 cup pastry flour
1/2 tsp salt
1 egg
2 tbsp cold water
1 tbsp vinegar

1.  Grate lemon rind and squeeze juice into large saucepan.  Peel and core apples; chop coarsely and add to pan.  Stir in sugar, peel, cranberries, raisins, currants, cider/juice and spices.  Bring to a boil, reduce heat and stir occasionally;  simmer over medium-low uncovered for 35 minutes.
2.  Stir brandy into mincemeat and simmer, stirring for 5-10 minutes until thickened.  Remove from heat; stir in butter and walnuts.
3.  Let cool and store in an airtight container in refrigerator for up to 4 weeks, or freeze for longer storage (makes 7 cups of mincemeat).
4.  Preheat oven to 425 degrees.
5.  Cut together shortening, flour and salt until small clumps form.  Mix together egg, water and vinegar.  Stir wet mixture into flour mixture until it balls together.
6.  Divide dough into two.  Roll out one ball on well floured surface (pastry flour) with floured rolling pin until thin.  Using a circle shaped cookie cutter, cut dough into circles.  Press circles into mini-muffin tray.  Reball and roll again (only do this twice), cutting more circles.
7.  Fill pastry shells with spoonful of mincemeat (do not overfill).  Top each tart with small pastry shape cut with cookie cutter.
8.  Bake for 15 minutes.  Run knife around edge of cooled tarts and remove from pan onto wire rack.
